Restaurant Management

The journey begins in one of our restaurants. Over the course of eight weeks, each candidate will receive hands-on experience as a server, bartender, greeter, prep/line chef, and more. Interspersed with these duties are frequent manager shifts, including work with our restaurant accountant, Culinary Manager and General Manager. Finally, manager trainees will complete a series of advanced projects in strategic areas including operations, systems, human resources and building sales. Feedback is frequent, candid, and fair, without the simplified grading systems and reductive evaluations found in corporate chains. We believe development is most powerful when it happens through intelligent dialogue and collaboration.

Culinary Management

Our back-of-the-house programs substitute more in-depth chef training for front-of-the-house responsibility. Potential Culinary Managers at Hillstone generally pursue one of two tracks: one which leads to detailed operating responsibilities for a particular restaurant, and the other which culminates in an Executive Chef role. While the latter tends to attract candidates with formal culinary education, such training is not required for consideration. Hillstone welcomes candidates with culinary degrees who would prefer to pursue training with a front-of-house emphasis.

Summer Internships

Hillstone offers a limited number of summer internships to exceptional candidates currently enrolled in an accredited undergraduate institution. The three-month paid program is essentially a miniature version of our management training program, in which the intern will work through the multiple functions of the restaurant. The internship also includes a summer-long project, jointly created between the intern and General Manager. Admission is highly selective, targeting candidates who want to get a jump-start on their careers with Hillstone.
